Day to day


Under the general guidance of the Executive Chef, and within the limits of established policies and procedures, prepares pastries that result in a high quality of taste and appearance to satisfy guests and maximize food revenues.


  1. Reports directly to the Executive Chef.

  2. Interacts and liaises closely with the Executive Chef, Executive Sous Chef and Sous Chefs.


  1. Partners with the Executive Chef, Executive Sous Chef, Michael Jordan’s culinary team (including pastry cooks on their team) Sous Chefs and other Pastry team to provide pastries and dessert dishes for the hotel operation. Supervises the pastry cooks and other cooks that assist in pastry production, and leads the banquet staff in presentation for banquet events and restaurant displays.

  2. Prepares pastries for guests in established service style and standard.

  3. Promote a positive image by displaying impeccable manners, diplomacy and tact towards employees.

  4. Prepares cakes, cookies, desserts, ice creams and other pastry items as required.

  5. Checks the dessert mis-en-place (Ice cream, du jour dessert, etc.) in the pantry and kitchen sub-sections.

  6. Ensure the quality and quantity of Danish, pastry, croissants and breads for the breakfast buffet and for all outside orders are within Standard.

  7. Checks all work related equipment for safety and cleanliness.

  8. Checks the daily function sheets and prepares items accordingly.

  9. Ensures the proper handling, cleanliness and maintenance of the working area, marble, ice cream machine and cold room, according to sanitation and safety procedures.

  11. Perform other duties, tasks and special projects as assigned.

  12. Maintain constant flow of communication with and to the team.

  13. Communicates to his/her manager any difficulties, guest comment and other relevant information

  14. Performs duties noted on the daily tasks & cleaning schedule

  15. Establishes and maintains effective employee working relationships

  16. Attends and participates in daily briefings and other meetings as scheduled.

  17. Attends and participates in training sessions as scheduled.

  18. Implements the hotel and department regulations, policies and procedures including but not limited to:

  20. Health and Safety

  21. Grooming

  22. Quality

  23. Service

  24. Hygiene and Cleanliness

Perform other duties, tasks and special projects as assigned.




  • Prior experience as a Pastry Cook is required

  • Must be able to speak, read and understand English

  • High School diploma or equivalent

  • Food Hygiene awareness and at least basic training.

  • Ability to effectively communicate in English.

  • Ability to compute basic mathematical calculations.

  • Ability to provide legible written communication.


  • Food Hygiene certificate.

  • First aid awareness.

  • Possess a friendly, upbeat & outgoing personality.

Essential Skills:

  • Ability to perform job functions with attention to detail, speed and accuracy.

  • Ability to prioritize, organize and follow through.

  • Ability to be a clear thinker remains calm and resolves problems using Sound judgment.

  • Ability to work under pressure.
