Direct and supervise kitchen staff, including scheduling dishwashers and cooks. The KM assigns cooks tostations, ensures all orders are timely filled, and monitors the overall safety of the workplace. The KM reportsdirectly to the proprietor and works as a peer to the front of the house manager. The KM may help cooks preparefood for service including prepping raw items for cooking, blending sauces, and tasting dishes for properseasoning. The KM inspects all produce, bread, cheese, and meats for defects before allowing the cooks to takematerials to their stations. The KM is responsible for ordering food from vendors and keeping records of delivereditems.
