**[PURPOSE: [The purpose of this position is to prepare and serve meals to Corrections inmates/detainees and to clean the kitchen and food preparation equipment.

  • Prepares and cooks all meals for inmates on an assigned shift
  • Prepares or assists in the preparation of hot and cold meat and vegetable dishes, beverages, sandwiches, simple bakery items, and/or other similar food items, as appropriate to the position
  • Prepares drink mix containers and/or hot water containers for disbursement to housing units
  • Prepares sack meals for inmates leaving the facility
  • Reviews menu diet cards for preparing inmate special meals/snacks
  • Loads and sets up delivery carts with appropriate number of meal and special diet trays for disbursement to housing units
  • Maintains and ensures all security of food storage areas and sharp kitchen utensils
  • Maintains standards of sanitation and cleanliness - Cleans and sanitizes food preparation area and all equipment
  • Cleans and maintains all work areas, including sweeping and mopping floors - Collects and places garbage and trash in designated containers as appropriate to the area of operation
  • Assists inmate workers in washing dinner trays and other kitchen equipment
  • Assists in receiving and storing food and supplies
  • Maintains knowledge of food preparation, presentation methods, techniques, and food safety procedures
  • Performs miscellaneous job-related duties as assigned
